Hot Italian Sausage?
Let me tell you right off, I do not like spicy food. I cannot tolerate the heat and I just don’t think it tastes good.
So why Hot Italian Sausage?
Once you cook the sausage and vegetables together, it adds flavor to everything without the soup being spicy. It’s one of the reasons I do not add any more herbs or spices to this soup because the sausage is full of spices that absolutely compliments Sausage Florentine Soup.
Of course, if you like a little more spice, you can add some red pepper flakes, but that would be your own preference.
*You can find Italian Sausage in links or ground in your meat department. If you are using links, remove the sausage from the casings before browning.
Florentine?
Sometimes (okay maybe more than sometimes 😆) it takes a few days to think of a name of a recipe that I have created. I’ll go all over the place in my mind trying to have the perfect name. Sometimes one will come to me in the middle of the night while I am asleep. Yes, I dream of recipes to create. Or just out of the blue the perfect name will come to mind. Unfortunately, the latter did not happen 😏. I kept going on and on trying out names until I thought of the spinach in my soup and there it was? Florentine!!!
Florentine is either anything referring to Florence, Italy or means it’s prepared with spinach. So there you go. Sausage Florentine Soup!!!
What Do I Need to Make Sausage Florentine Soup?
You will need a dutch oven or large saucepan, measuring cups and spoons, cutting board, knife, mixing spoon, ladle, and the following ingredient:

Mama Fawn’s Tips…
- You can substitute mild sausage for this recipe but know that the spiciness of the sausage doesn’t make the soup spicy but adds lots of flavor.
- If you are using link Italian sausage, remove from the casings before browning.
- You can use turkey sausage if you prefer, but you may need to add some oil while cooking the carrots and onions.
- If you cannot find small pasta shells, any small pasta will work. Just cook the pasta according to the time guidelines.
- Heavy cream makes this soup have a creamy richness, but feel free to use half and half or whole milk.
- I use fresh baby spinach for this recipe but if you use regular fresh spinach you will want to cut the stems off and coarsely chop it.
- The best quality ingredients will make you a quality tasting soup but feel free to use the grated parmesan in the green container if that is what you have. It will still be delicious.
Sausage Florentine Soup

1 lb hot Italian sausage
½ onion, chopped
½ cup chopped carrot
½ tsp salt
6 cups chicken broth or stock
1 ½ cup small pasta shells
½ cup heavy cream
3 cups fresh spinach
½-¾ cup grated parmesan
Directions
- In a dutch oven or large saucepan, add the italian sausage, chopped onion and carrot and salt. Cook over medium heat until sausage is no longer pink and onion is softened, breaking up the sausage; about 10-12 minutes.
- Turn up the heat to medium-high and add the chicken broth. Bring to a boil and add the pasta shells and cook according to the directions on the box, stirring occasionally.
- Bring down the heat back to medium and once the soup is to a slow simmer, add the heavy cream and spinach. Cook for 1-2 minutes or until the spinach is tender.
- Sprinkle with the parmesan cheese before serving.
