Reuben Egg Rolls with Russian Dressing is my take on the classic Reuben Sandwich but in easy to hold egg rolls. It’s an enjoyable way to eat the traditional sandwich without the drippy mess.
What is a Reuben Sandwich?
Your typical Reuben Sandwich consists of corned beef, swiss cheese, sauerkraut and russian dressing usually on rye bread. Its origin is kind of a mystery because quite a few people want to take the credit for the creation of the sandwich.
From a Lithuanian born Jewish man residing in Nebraska to a restaurant in New York, everyone has a story. After doing quite a bit of research (10 minutes of my time), I found out it did come from Nebraska but still not sure which man came up with the idea of a Reuben Sandwich but it’s okay, it’s a great sandwich.
Why an Egg Roll?
I think egg rolls are a fun way to eat food. You can practically stuff the egg roll wrappers with any combination of food and the Reuben filling works quite well.
Don’t be intimidated by making egg rolls. They are quite simple and my Reuben Egg Rolls are less mess because they are baked and not fried. I’m all for less clean up and maybe a smidge healthier. 😆
What is Russian Sauce?
Russian Dressing is generally the condiment that is served on a Reuben Sandwich so I thought it would be apropos to serve this as a dipping sauce.
Russian dressing usually consists of a mayonnaise and ketchup blend (think 1000 Island Dressing minus the pickles). My recipe for Russian sauce is a little more spicy with the addition of horseradish and I substitute chili sauce for the ketchup. Why do I do this? There are two (2) reasons:
1) Chili sauce adds a little flavor to the sauce and
2) Not a fan of ketchup. 🤣 So there you go!
What is Actually Sauerkraut?
Sauerkraut is fermented cabbage. It only contains about 30 calories per serving. Sauerkraut is pretty high in fiber and a good source of vitamin C and K, iron and potassium. And it is known to improve your digestion, boost your immune system, helps reduce stress and maintain brain health and contributes to stronger bones.
What Do I Need to Make Reuben Egg Rolls with Russian Sauce?
You will need baking sheet, parchment paper or aluminum foil, colander, cutting board, knife, measuring cups, measuring spoons, grater, tongs and the following ingredients:

- Homemade corned beef or deli corned beef works well with this recipe.
- You can find bags of sauerkraut in the section where you can find the hot dogs and sausages.
- Make sure you squeeze the excess liquid from the sauerkraut.
- The chili sauce is found in the condiment aisle. (Usually near the barbecue sauce)
- I find my egg rolls wrappers in the produce section.
- The back of the egg roll wrappers package shows you how to roll the egg rolls. Super easy!!
- Please let the egg rolls cool off before you serve them because they are very hot.
Reuben Egg Rolls w/ Russian Sauce

1 cup chopped corned beef
1 ¼ cup shredded swiss cheese
1 cup sauerkraut, drained and squeeze
12 egg roll wrappers
2-3 tbsp vegetable oil
1 cup mayonnaise
¼ cup chili sauce
1 tbsp prepared horseradish
Pinch of salt
Directions
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper or aluminum foil. Brush on some of the vegetable oil over the parchment/foil, covering the whole area.
- In a large bowl, add the corned beef, swiss cheese and sauerkraut and mix until well combined.
- Roll filling into the egg roll wraps making sure the filling is evenly divided. (Follow directions on the package on how to roll them).
- Place the egg rolls on the oiled baking pan, making sure they are not touching. Brush vegetable oil over the tops and sides of each egg roll.
- Bake the egg rolls for 10 minutes. Flip the egg rolls over and bake for another 10 minutes. Remove the egg rolls to a paper towel lined plate and let rest for a few minutes before serving.
- While the egg rolls are baking, mix the mayonnaise, chili sauce, horseradish and salt in a small bowl until it is combined well. Enjoy!
