Cranberry Orange Bread is a moist and tasty quick bread made with cranberry sauce and fresh orange juice and will be ideal for Thanksgiving or Christmas Breakfast (or any time).

What is a Quick Bread?

A quick bread is any bread that uses baking soda or baking powder and doesn’t need to rise before baking.  

One of the reasons Cranberry Orange Bread is perfect for the holidays is because it only takes minutes to prepare and ready to bake.

Why the Combination of Cranberry and Orange?

Cranberry and Orange is one of my favorite flavor combinations.  Actually, I like it in candle scents also . . 😂.  I make Christmas Punch every year which is a mix of the Cranberry and Orange Juice.  If I drank cocktails, I’m sure my favorite would be the Madras since it uses my favorites.

I always feel the two remind me of the holidays also and that alone is why they are the perfect combination.

What do I Need to Make Cranberry Orange Bread?

You will need a 9 x 5 loaf pan, parchment paper, a medium and large mixing bowl, spoon, measuring cups, measuring spoon, can opener, cutting board, knife, and the following ingredients:

Mama Fawn’s Tips. . .

  •  If you don’t have parchment paper, you can grease and flour the loaf pan.
  • I do not use greek yogurt for this recipe and make sure it is plain and not vanilla.
  • If the middle does not come out clean after the allotted baking time, bake for 5 minute intervals until it does come out clean.
  • The best way to slice the bread is with a serrated knife.  
  • Serve the Cranberry Orange Bread warm, room temperature or chilled.  No matter what, it is delicious.

Ingredients

  • 2 cups all purpose flour

  • ¾ cup sugar

  • ¾ tsp baking soda

  • ½ tsp salt

  • 1 14 oz. can whole cranberries

  • ¼ cup plain yogurt

  • 2 large eggs, lightly beaten

  • 6 tbsp butter, melted

  • 1 ½ tsp orange zest

  • 2 tbsp orange juice

Directions

  • Preheat the oven to 350 degrees.
  • Line a 9 x 4 loaf pan with parchment paper.
  • In a medium bowl, combine the flour, sugar, baking soda and salt. Set aside.
  • Mix the cranberry sauce, yogurt, eggs, orange juice, orange zest and butter together in a large bowl. Lightly fold the dry ingredients into the cranberry mixture and mix until just combined.
  • Pour the batter into the loaf pan. Bake for 55-60 minutes or until the bread is golden brown and the center is dry. Cool in pan for 10 minutes then transfer to a wire rack. Enjoy!
