Cranberry Walnut Cookies are crisp, chewy, crunchy and tart.  The perfect dessert or snack for those that are looking for something more than the average cookie.

What is a Cranberry Walnut Cookie?

I see these cookies a little bit like a granola bar but in cookie form.  Cranberry Walnut Cookie is full of nuts, fruit and oats, the perfect cookie for a midday pick me up.  Add a cup of tea or iced coffee and they should help you make it until dinner.

Cranberries and walnuts have many health benefits which makes it a little less guilty eating a cookie or two.  👍

Cranberries can boost immune systems, help cure anemia, relaxes muscle cramps and what they are most known to help:  combats UTI’s.

Walnuts are rich in much needed nutrients and they deliver healthy fats. These nuts can also help reduce blood pressure.

What Do I Need to Make Cranberry Walnut Cookies?

You will need a mixing bowl, spatula, spoon, mixer, measuring spoons, measuring cup, baking sheet, parchment paper, cookie scoop and the following ingredients:

  •  Have all the ingredients measured and ready before starting.
  • Preheat the oven before you begin making the cookie dough.
  • Have your cookie sheet lined and ready to go before you begin making the cookie dough.
  • Make sure the butter is softened to make it easier to cream.
  • It’s important to place the cookie dough 2 inches apart because they do spread during baking.
  • Chilling the cookie dough before baking helps the cookies from spreading too much.
  • Letting the cookies sit on the baking sheet before transferring to the cookie rack helps the cookie to finish baking.
  • Fold the dried cranberries and walnuts with a spoon instead of the mixer to help from breaking them.

Ingredients

  • 1 cup butter, softened

  • 1 cup brown sugar

  • 1 cup sugar

  • 2 eggs

  • 1 tsp vanilla

  • 2 cup flour

  • ½ tsp salt

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 2 cups old-fashioned oats

  • 2 cups dried cranberries

  • 2 cups walnuts, chopped

Directions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, cream the butter, sugar and brown sugar for 4 minutes.
  • Add the eggs and the vanilla and mix well.
  • Add the flour, oats, salt, baking soda and baking powder and mix well until combined but not over mixed.
  • Fold in the dried cranberries and walnuts until it is all incorporated into the batter evenly.
  • Chill the cookie dough for 30-60 minutes.
  • With a teaspoon or small cookie scoop, spoon the dough evenly on a parchment lined baking sheet. Make sure they are a couple of inches apart. Bake for 10-12 minutes or until browned around the edges. Remove from the oven and let cool on the baking sheet for 2 minutes before removing them to a wire rack to cool completely. Enjoy!
