What Do I Need to Make Cranberry Walnut Cookies?
You will need a mixing bowl, spatula, spoon, mixer, measuring spoons, measuring cup, baking sheet, parchment paper, cookie scoop and the following ingredients:

- Have all the ingredients measured and ready before starting.
- Preheat the oven before you begin making the cookie dough.
- Have your cookie sheet lined and ready to go before you begin making the cookie dough.
- Make sure the butter is softened to make it easier to cream.
- It’s important to place the cookie dough 2 inches apart because they do spread during baking.
- Chilling the cookie dough before baking helps the cookies from spreading too much.
- Letting the cookies sit on the baking sheet before transferring to the cookie rack helps the cookie to finish baking.
- Fold the dried cranberries and walnuts with a spoon instead of the mixer to help from breaking them.

1 cup butter, softened
1 cup brown sugar
1 cup sugar
2 eggs
1 tsp vanilla
2 cup flour
½ tsp salt
1 tsp baking soda
1 tsp baking powder
2 cups old-fashioned oats
2 cups dried cranberries
2 cups walnuts, chopped
Directions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, cream the butter, sugar and brown sugar for 4 minutes.
- Add the eggs and the vanilla and mix well.
- Add the flour, oats, salt, baking soda and baking powder and mix well until combined but not over mixed.
- Fold in the dried cranberries and walnuts until it is all incorporated into the batter evenly.
- Chill the cookie dough for 30-60 minutes.
- With a teaspoon or small cookie scoop, spoon the dough evenly on a parchment lined baking sheet. Make sure they are a couple of inches apart. Bake for 10-12 minutes or until browned around the edges. Remove from the oven and let cool on the baking sheet for 2 minutes before removing them to a wire rack to cool completely. Enjoy!
