Why is it Asher’s Favorite?

Asher is my grandson and he has the biggest sweet tooth I’ve ever known for a toddler.  My daughter never cared for sweets growing up so I was a little surprised to see Asher like sweets as much as he does.  

My brother was coming to visit for the weekend and so I had the family over for dinner a couple of nights.  I decided to make this pie for them so they could be my ‘test tasters’.  It was a success but the one who really enjoyed it was Asher, to the point he was going to each person asking for a taste of their chocolate pie. The next night, I gave him his own slice, but he still had to go person to person for some pie.  I guess if a toddler likes it as much as he does, he deserves to have it named after him.  😄

Asher’s Favorite Chocolate Pie has a combination of a cheesecake and a mousse filling making it a smooth but rich pie.  The Oreo pie crust is not only easy to make with two ingredients, but really adds to the chocolate heaven this pie is to your taste buds.   What I really appreciate about Asher’s Favorite Chocolate Pie is that it cuts so easily, making beautiful smooth slices.  It’s a pretty foolproof dessert.

What do you need to make Asher’s Favorite Chocolate Pie?

You will need a 9 inch pie plate, mixing bowls, measuring cups, spatula, mixer and the following ingredients:

  •  To make the Oreo Crumbs, put  them in a food processor and grinded them until they become crumbs.
  • Make sure the cream cheese is softened and the whipped topping is thawed for a smooth texture.
  • You may need to fold the chocolate filling with a rubber spatula to make sure the chocolate is totally incorporated.  You don’t want streaks.
  • Chilling the pie for a few hours will guarantee  smooth slices when you are ready to serve.
  • For something extra fancy, serve the pie with a raspberry puree or macerated strawberries.
  • Serve with a dollop of whipped topping.

Ingredients

  • 1 ½ cup Oreo Crumbs

  • 4 tbsp butter, melted

  • 2 cups semi sweet chocolate chips

  • ½ cup heavy cream

  • 8 oz. cream cheese, softened

  • ¼ cup sugar

  • 8 oz. whipped topping, thawed

Directions

  • Combine the Oreo crumbs and melted butter and press into the bottom and sides of a pie plate. Set aside.
  • Place the chocolate chips and heavy cream in a large glass measuring cup or glass bowl. Microwave at 30 second intervals until the chocolate chips are melted and smooth, stirring after each interval. Let chocolate mixture cool to room temperature.
  • Combine cream cheese and sugar in a large bowl. Beat until smooth.
  • Pour cooled chocolate mixture into the cream cheese mixture. Add the whipped topping and beat on low until thoroughly combined. You may have to fold with a spatula to get all the chocolate from the bottom of the bowl.
  • Pour the chocolate filling evenly into the pie crust. Refrigerate for several hours until set. Enjoy!
