Salsa Verde Pork & Rice Skillet is an easy one pot meal that is full of flavor with a little kick.

I’m always looking for a quick meal to make during the week especially when I have a busy schedule.  Something that you can dump all the ingredients in a pan and be ready within an half hour.  Salsa Verde Pork and Rice Skillet is the absolute perfect dish for that kind of evening.  Serve it with a vegetable and it’s a complete meal.

What is Salsa Verde?

Salsa Verde is a spicy, green salsa made with tomatillos and chilis.  It’s a little spicy, but not too much, just enough to give it a great flavor.  The tomatillos have a slight acidic flavor but a real fresh taste about them.  It’s actually one of my favorite types of salsas. You can find jars of salsa verde in your local grocery store where they sell Latin foods, usually with the other varieties of salsa.

Why use Pork?

I think pork and salsa verde are perfect with each other.  I had a Verde Chile Stew before that had so much flavor that it’s one of those dishes that leaves an imprint on your tastebuds and so I always think they are a great combination together.

What do I need to make Salsa Verde Pork & Rice Skillet?

A large skillet with a lid, knife, cutting board, measuring cups, cheese grater, measuring spoons and the following ingredients:

Mama Fawn’s Tips. . .

  •  I think pork is perfect for this dish, but you can use ground chicken also.  You may have to add a little cooking oil.
  • To add a little more spice to the dish, substitute pepper jack for the monterey jack.
  • Serve this as it is or as a filling for tortillas.  Add lettuce, tomato, cilantro, sour cream to make the perfect tacos.
  • Be careful with adding too much salt.  Salsa Verde is a little on the salty side.  You don’t want to overdo it.
  • Do not lift up the lid while the rice is cooking.

Ingredients

  • 1 pound ground pork

  • 1 small onion, diced

  • ¼ tsp salt

  • 1 cup long grain rice

  • 1 cup salsa verde

  • 1 cup chicken broth

  • 1 cup shredded monterey jack cheese

Directions

  • In a large skillet with lid, add the ground pork, diced onion and salt. Cook over medium high heat until the pork is no longer pink and the onion is translucent.
  • Add the rice and stir for one minute.
  • Add the salsa verde and chicken broth and stir well.
  • Cover with lid and turn heat down to simmer. Cook for 20 minutes, without lifting the lid.
  • Top with the cheese and return the lid to the pan for 2-3 minutes until the cheese is melted.
  • Enjoy!
