Corned Beef & Cabbage Hash w/ Russian Dressing Sauce

Corned Beef and Cabbage Hash w/ Russian Dressing Sauce is a combination of a Reuben and Corned Beef Hash. . . a little of both worlds.

One of my favorite things for breakfast is Corned Beef Hash and Eggs.  If I see it on the menu, most likely I’m going to order it.  I’m probably a little odd but I like the canned corned beef hash.  Mainly, when you get the homemade hash, it usually has onions and peppers, and I’m not a fan of peppers.

I consider Corned Beef and Cabbage Hash like a deconstructed Reuben and the corned beef hash I adore.  A Reuben sandwich is a grilled sandwich composed of corned beef, sauerkraut, swiss cheese and 1000 Island or Russian Dressing.  Instead of sauerkraut, which I do like, I replaced it with the cole slaw mix but other than the rye bread, it’s pretty much a Reuben (with potatoes).

What is great about this dish is that you cook it in one pan.  The less pans you have to use, the less mess to clean and I’m all for that.

What do I need to make Corned Beef Cabbage Hash w/ Russian Dressing Sauce?

You will need a large skillet, spatula, cutting board, knife, measuring cup, measuring spoons, vegetable peeler and the following ingredients:

  •  You can use leftover or deli corned beef for this recipe.  
  • I use coleslaw mix for this recipe, but feel free to shred your own cabbage.
  • Slice the potatoes as thin as possible so they will cook quickly.
  • For a more rustic dish, do not peel the potato, but make sure you scrub it clean first.
  • If you like a little more zing in your Russian Dressing sauce then add a little more horseradish.
  • Chili sauce can be found in the grocery store aisle that sells condiments.
  • Serve some fresh rye bread with this dish and you have the perfect meal.

Ingredients

  • 1 large potato, peeled, cut in half and sliced thin

  • 1 small onion, diced

  • 2 tbsp vegetable oil

  • ½ tsp salt

  • 2 cups corned beef, cubed

  • 3 cups coleslaw mix

  • ½ cup chicken broth

  • 1 cup shredded swiss cheese

  • Sauce

  • 1 cup mayonnaise

  • ¼ cup chili sauce

  • 1 tbsp horseradish

  • Pinch of salt

Directions

  • In a large skillet over medium heat, add the sliced potatoes, diced onions and slat. Cook for 6-8 minutes or until the potatoes and onions are tender, stirring constantly.
  • Add the corned beef and cook for 5 minutes until the corned beef begins to brown.
  • Add the cole slaw mix and chicken broth and stir well for 5 minutes.
  • Top with the swiss cheese and serve Russian Dressing Sauce. Enjoy!
  • For the Russian Dressing Sauce: combine the mayonnaise, chili sauce, horseradish and a pinch of salt.
