Pistachio Delight

Pistachio Delight is a delicious layered dessert that is perfect for the summer or any holiday that requires something green. . . 😂

This dessert is actually an adaptation of a recipe I received from a book of recipes from my grandmother.  The original recipe had walnuts instead of pistachios and chocolate pudding mix.   

I came up with the dessert because I was thinking of something  to serve as a dessert for St. Patrick’s Day.  Obviously something green would be apropos for this holiday and I couldn’t really think of anything sweet that would work unless I used green jello. . . 😣  So I came up with this.  Pistachio Delight would also be a nice dessert for Christmas also.

Why Pistachios?

The reason I decided on pistachios is pretty obvious, they are green!  Plus, I really like the flavor of pistachios.  It’s actually one of my favorite flavors of ice cream.   Although it’s a dessert, pistachios are pretty good for you.

Pistachios, like most nuts, are loaded with nutrients and high in antioxidants which is vital to our health. Actually, pistachios are among the most antioxidant rich nut available. They are high in protein and promote healthy gut bacteria. Other benefits is that they are known to lower cholesterol and blood pressure. So as you are eating your Pistachio Delight, maybe you can have a little less guilt knowing that pistachios are healthy.

What do you need for Pistachio Delight?

You will need a couple of bowls, spatula, mixer, and a 9×13 baking dish.

Mama Fawn’s Tips. . . 

  •  Using a food processor would be the best choice to finely chop the pistachios, but you can also place them in a bag and pound them with a rolling pin or frying pan.
  • Make sure the cream cheese is softened.  This will make it easy to combine the sugar and whipped topping.
  • I use parchment paper to line the baking dish but if you don’t have that make sure you grease the baking dish well.
  • To make your dessert a little fancier, you can use any shape baking dish.
  • I keep the dessert in the refrigerator as I am preparing the layers.
  • Pistachio Dessert needs to stay chilled.

Pistachio Delight

Ingredients

  • 2 sticks butter, melted

  • 2 cups flour

  • 1 cup finely chopped pistachios

  • 8 oz. cream cheese, softened

  • 1 cup sugar

  • 1 8 oz. whipped topping, divided

  • 1 3.4 oz. pistachio flavored instant pudding

  • 1 ¾ cup milk

  • Extra chopped pistachios, for garnish

Directions

  • Preheat the oven to 350 degrees.
  • Prepare the crust by combining the melted butter, flour and chopped pistachios. Press the mixture firmly into a greased 9×13 baking dish. Place into the oven and bake for 25-30 minutes. Remove from the oven and let cool.
  • In a bowl, beat the cream cheese and sugar until completely combined. Add 1 cup of the whipped topping and mix well. Spread the cream cheese mixture evenly over the cooled crust.
  • In a bowl, whisk the pudding mix and the milk for 2 minutes. Let set for an additional 3 minutes. Spread the pudding evenly over the cream cheese mixture.
  • Spread the remaining whipped topping over the pudding layer.
  • Sprinkle with additional chopped pistachios, if desired. Let chill in the refrigerator for an hour before serving. Enjoy!
