The red and green in this side dish would be a splendid compliment to your Christmas dinner and would go great with your ham or turkey (or any main dish).

Green beans are one of my favorite vegetables and they really are quite versatile.  I actually like to eat them with my fingers and eat them as a snack.  Of course, I have to be in the right company for that. . .  😉

Mama Fawn’s Tips. . . 

  •  To trim the green beans you can either cut the ends or snap them off, I do the latter.
  • Make sure you pat dry the beans so you have a roasted bean and not a steamed one.
  • If you have fresh cranberries on hand, feel free to use them in this dish.  It will make the green beans more tart than sweet.
  • This recipe is very easy to half or double.

A sweet and savory side dish. . .

Ingredients

  • 2 lb fresh green beans, trimmed

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1 clove garlic, minced

  • ½ cup dried cranberries

  • ¼ cup sliced almonds

Directions

  • Preheat the oven to 400 degrees
  • Rinse the green beans and pat dry.
  • Spread the green beans on a rimmed cookie sheet. Drizzle with the olive oil and garlic. Season with salt. Toss the green beans until they are evenly coated with the oil, garlic and salt. Spread the beans in a single layer.
  • Top with the dried cranberries and almonds.
  • Roast in the oven for about 25 minutes.
