Apple & Cranberry Dressing

Apple & Cranberry Dressing

Now to the King eternal, immortal, invisible, the only God, be honor and glory for ever and ever. Amen. . .” 1 Timothy 1:17

Apple & Cranberry Dressing is savory, sweet and tart, an explosion of taste that will go perfectly with your turkey or other main dish.

Is there a difference between ‘Dressing’ & ‘Stuffing’?

Most people interchange ‘dressing’ and ‘stuffing’ but there really is a difference between the two of them.

Dressing is a side dish that is cooked in a baking dish and stuffing is cooked inside the turkey (or chicken) hence the word stuffing. Some may say I’m arguing semantics but the truth is they are different….

Apple & Cranberry Dressing is the perfect side dish for your holiday meal.  Not only is it absolutely scrumptious but it will definitely add some color to your table (and plate).

As a lot of you know, I am always telling you to make your dishes your own.  If you want a more rustic dressing, use a country or even a rye bread.  If you want a more tart dressing, then use a Granny Smith Apple.  Adding a green apple will make it more festive looking if you are serving Apple & Cranberry Dressing for Christmas.

You really can’t go wrong with Apple & Cranberry Dressing for part of your meal and your family and friends are going to really love it.

Mama Fawn’s Tips. . .

  •  I tear the bread for this dressing because this is what my mother did growing up. It’s a great way of getting your children to help with the dinner.
  • Use whatever kind of bread you either desire or have on hand.  You do not want to use fresh bread, stale bread is the best for this dish.  I usually tear (or cube) the bread first and let it sit uncovered while I get all the ingredients ready.
  • Have all your fruit, vegetables and herbs chopped and all the other ingredients measured before you start cooking.
  • Feel free to use any apple you desire.  I used a sweet apple to counteract with the tart cranberries.
  • If you want to make this dressing vegan or vegetarian, substitute the butter for olive oil, the chicken stock for vegetable stock and omit the egg.
  • Poultry seasoning is a combination of thyme, sage, marjoram, rosemary, pepper and nutmeg.  If you don’t have it, you can add ½ tsp sage and some black pepper.
  • This recipe is very easy to double or triple, so feel free to do it if you need to feed a large crowd.

Ingredients

  • 8 cups bread, torn or cubed

  • 1 stick butter, divided in half

  • 1 small onion, diced

  • 1 rib celery, diced

  • 1+ tsp salt

  • 1 apple, cored and chopped

  • 1 tbsp fresh parsley, minced

  • 2 cups chicken stock

  • 1 egg

  • ½ tsp poultry seasoning

  • 1 cup fresh cranberries

Directions

  • Preheat the oven to 350 degrees.
  • Heat half the butter in a dutch oven over medium heat. Once the butter is melted, add the onion, celery and salt. Cook for 5 minutes, stirring occasionally.
  • Add the apple and cook for about 3-4 minutes until the apple is softened but not mushy. Stir in the parsley and cook for another minute.
  • Meanwhile, in a large measuring cup, add the broth and poultry seasoning. Whisk in the egg. Set aside until ready to use.
  • Take the pan off the heat and add in the bread pieces, mix well until all the bread is completely covered with the butter mixture. Mix in the cranberries. Add the chicken broth mixture and stir until thoroughly combined.
  • Transfer to a 1 ½ quart shallow baking dish and dot the top with additional butter. *Cover and bake for 30 minutes. Uncover and bake for an additional 10-15 minutes.

    * If you like a drier dressing, do not cover and bake for 40 minutes. If the top begins to brown too quickly, then cover to prevent the dressing from burning.
