You have to admit, ice cream sandwiches are pretty much a complete dessert. Don’t need anything else to make it perfect.  Soft, chewy cookie and cold, creamy ice cream, I mean, hello!  But what if I told you that you can make a perfect dessert even more perfect?  How about not only a cookie and ice cream but it is covered with a hard chocolate shell.

Chocolate Covered Ice Cream Sandwiches are just that.  I don’t even have the words to describe how absolutely delish this dessert is to eat.

What makes the Cookies special?

Let’s start with the cookie base- butter, two kinds of sugar, vanilla, oats, and my favorite addition- malted milk powder!!!  The malted milk powder adds a level of flavor that really makes this cookie complete.  The smell alone of the dough is heavenly.

Now for the ice cream . . . you can pretty much use any flavor you like.  I use chocolate chip ice cream because this is the one I like at the moment but any ice cream that goes with chocolate should work.

The Magic shell chocolate is what brings an ordinary ice cream sandwich over the top.  To make these easier and I think it looks kind of cool, I only dip the ice cream sandwiches half way.  Now you can do the whole sandwich if you prefer, make it your own!!!

Mama Fawn’s Tips. . . 

  •   Have all your ingredients measured out and ready before starting.
  • Scoop your ice cream ahead of time and place it back into the freezer until ready to use.  This will help with the time.
  • Make sure the butter is softened to make it easier to cream.
  • Mixing the butter and sugars for a full five minutes gives the cookie a great texture.
  • It’s important to use a teaspoon or small cookie scoop because the cookies spread.
  • Have your plastic wrap or baggies ready to go when you are ready to sandwich the ice cream in the cookies.  It needs to go into the freezer quickly.
  • Use your favorite ice cream for this ice cream sandwich.

Chocolate Covered Ice Cream Sandwiches

a delicious dessert for any time of the year.

Ingredients

  • 2 sticks butter, softened

  • ¾ cup sugar

  • ¾ cup brown sugar

  • 1 tsp vanilla

  • 2 large eggs

  • 2 cups flour

  • 2 cups old fashioned oats

  • 1 tsp baking soda

  • 1 tsp salt

  • ¼ cup malted milk powder

  • Scoops of your favorite ice cream

  • 2 cups chocolate chips

  • 5 tbsp shortening or coconut oil

Directions

  • Preheat the oven to 350 degrees.
  • Beat the butter, sugars and vanilla in a large mixing bowl for 5 minutes. Add the eggs, one at a time, beating well after each one.
  • Add the flour, oats, baking soda, salt and the malted milk powder and mix well until well combined but not over mixed.
  • Line a baking sheet with parchment paper. With a teaspoon or small cookie scoop, place the dough evenly on the sheet. Bake for 10-11 minutes or until golden brown. Cool on the baking sheet for 2 minutes and remove to wire racks to cool completely.
  • Once the cookies are completely cooled, flip a cookie over and place a generous scoop of ice cream on top. Sandwich another cookie on top and gently press it together to make a sandwich. Immediately wrap the ice cream sandwiches in plastic wrap and place in the freezer for a couple of hours.
  • Melt the chocolate and shortening (or coconut oil) together in the microwave. Cook at 30 second intervals, stirring until smooth. Let cool for 10 minutes. Dip half the cookie in the magic shell and eat right away or freeze until ready. Enjoy!
