Spicy Shrimp Bowls are perfect for those looking for a fresh, guilt free meal that is packed full of veggies, shrimp and a spicy sauce.

I have to be honest with you.  I know this isn’t a popular opinion, but I am not a fan of sushi.  I know, I know!  I have a hard time eating raw fish and whatever other creatures they use in sushi. I like a lot of different foods but that is not one of them.  BUT… I will eat it if it has cooked seafood or just vegetables like the California Roll.

Why Spicy Shrimp Bowls?

My seafood department at my local Publix has a sushi bar.  Although I don’t care for sushi, I always have to take a look.  I want to like sushi, kind of like I want to like yogurt, but I don’t.  Now, the sushi bar has a sushi roll with rice, avocado, carrot and cucumber, served with wasabi and ginger.  It’s good.  I can handle it. They also make a sushi roll with all the vegetables I just mentioned and cooked shrimp topped with a spicy mayo.  I actually like it and once in a while, I’ll get it for a quick lunch with a pair of chopsticks.  

Then I begin to think, which sometimes can be a really dangerous thing.  I could make this, and know it would be fresh (not saying that the sushi isn’t fresh but I just saying) and I can add whatever to it I want.

That is how I came up with the Spicy Shrimp Bowl and I have to say, I was really impressed.  Obviously, I had to put my touch on it but I have to say this is really good.  What I like about it is that it is fresh, low in calories, full of flavor, and really quick to make.  What a perfect dish for a lunch or light dinner.

I start by using jasmine rice.  I really like the nutty flavor and it only takes 15 minutes to cook.  Then you want it to cool to room temperature which gives you time to get the rest of the ingredients ready.  You could definitely make sushi rice but I like the taste of the jasmine rice in this bowl.

Next I cook the shrimp.  The way I fix it is so easy and is always perfect.  Overcooked shrimp is too tough.  You won’t have that problem with this shrimp. Bake it for 8-10 minutes in the oven depending on the size of your shrimp.

Next is the spicy mayo.  So easy with only 3 ingredients, but absolutely flavorful.  Keep it chilled until ready to use.

Then comes the veggies.  I use the typical raw vegetables that come with the Spicy Shrimp Roll at the sushi department.  Carrots, cukes and avocado.  I get the bagged shredded carrots so it is one less thing to do. I seed the cucumber and slice it real thin and slice the avocado the same.

What makes Spicy Shrimp Bowls a little Special?

What makes Spicy Shrimp Bowls a little different is that I sprinkle Everything Bagel Seasoning over the bowls to give it a little more flavor and texture. The amount depends of your preference.

Mama Fawn’s Tips. . .

  •  For a quicker meal, use already cooked shrimp.
  • Cook the rice first so that the rice can be cooled before adding the shrimp and vegetables.
  • Not a fan of the vegetables I use in this dish, feel free to substitute what you like.
  • Want a spicier sauce?  Add more sriracha.
  • If you will not be eating the bowl right away, then wait until the right before you eat to add the avocado.
  • If you want to use sushi rice, the internet has plenty of recipes for you .
  • If you like wasabi, feel free to add it to your bowl.

Ingredients

  • 3 cups cooked jasmine rice, room temperature

  • 1 lb shrimp, cleaned, peeled and deveined

  • 1 tbsp olive oil

  • Salt & pepper

  • ½ cup mayonnaise

  • 1 ½ tbsp sriracha

  • 2 tsp lime juice

  • ½ cup shredded carrot

  • ½ cup cucumber, seeded and thinly sliced

  • 1 avocado, scooped, pitted and thinly sliced

  • Everything Bagel Seasoning

Directions

  • Preheat the oven to 400 degrees.
  • On a baking sheet, add the shrimp and toss with the olive oil and season with salt and pepper. Bake for 8-10 minutes or until pink. Remove from the oven.
  • In a small bowl, add the mayo, sriracha and lime juice and mix well. Refrigerate until ready to use.
  • Place half the rice in the middle of an individual serving bowl. Add half of the shrimp, cucumbers, shredded carrots and avocado in rows over the rice. Sprinkle with desired amount of Everything Bagel Seasoning. Spoon the spicy rice over the shrimp and vegetables. Do the same with the remaining ingredients with your second serving bowl. Enjoy!
