Sometimes I get a little obsessed with a certain ingredient or food fad, and s’mores is one of them.  I don’t know if it’s because once the summer starts, you see a bunch of commercials about campfires and making this gooey confection or because in my mind I don’t want to hang out in the heat near a fire. . . probably the latter.  :/

I’m always thinking there has to be an easier way but still the great taste of a s’more without dealing with the insects and humidity.  I know, I know!  I am complaining but that is what I do in the summer.  Thank the Lord for air conditioning!!

Then I realized that I could do this with my all time favorite surgery cereal.  I don’t eat cereal very often, mainly because I don’t eat breakfast every day, but when I do eat cereal, it is usually Shredded Wheat or Raisin Bran BUT my very favorite cereal is Golden Grahams.  And once in a while I splurge and get this cereal.  Add some melted marshmallows and some chocolate and Voila! I have the perfect s’mores without me complaining about being outside to make them.  No campfire, no oven, just one pan and a burner.

S’mores Bars is my take (kind of) on the Rice Krispie Treat but I use Golden Grahams Cereal and chocolate.  Pretty much the same concept but I add melted chocolate on top and chill it until the chocolate gets solid again.  

There are only 4 ingredients in S’mores Bars and only takes a few minutes to make before they go into the refrigerator to chill.  You can make these all summer long for your family and friends since they are so quick and easy.

Mama Fawn’s Tips. . .

  •  When you are greasing the baking pan, I use a sandwich bag as a glove and spread the dish with butter.
  • If you rather not grease the pan, feel free to use parchment paper.
  • Melt the butter and marshmallows on low heat.
  • Make sure you coat the cereal well with the marshmallows or the bars will break apart.
  • Keep an eye on the chocolate as it is melting so you don’t burn it.

Ingredients

  • 3 tbsp butter

  • 1 bag of miniature marshmallows

  • 6 cups Golden Graham Cereal

  • 2 cups semi sweet chocolate chips

Directions

  • In a dutch oven (large saucepan), melt butter over low heat. Add marshmallows and stir until completely melted. Remove from the heat and add the Golden Grahams. Stir until the cereal is well coated with the melted marshmallows. Evenly press the cereal mixture into a buttered 13x 9 baking dish.
  • In a microwave safe dish, melt the chocolate chips for one minute on high. Stir and melt at 30 second increments until the chocolate chips are melted and smooth.
  • Spread the melted chocolate evenly over the cereal mixture. Chill until the chocolate is set. Enjoy!
