Spicy Sausage & Corn Dip is a tasty and hearty dip to serve for your next football get together.  Sausage, corn, cheese, tomatoes, and peppers-how could you go wrong.  Even the most persnickety eater is going to enjoy this dip.

I came up with the idea of Spicy Sausage & Corn Dip from a combination of two recipes.  One recipe was a sausage and cheese dip that I’ve had a few times and thought it was quite good.  It only had a few ingredients and was very easy to make.

The second recipe is from a dish my mom made us a few times growing up.  It was a sausage and egg casserole using hard boiled eggs and corn.  I know this may not sound too appetizing but it was really good.  I’ve only made it once or twice when my brother came over for dinner and we both enjoyed it.  It is one of those dishes that reminds me of my mom’s dinners.  Of course, there aren’t any hard-boiled eggs in this recipe.  

I also add chili lime seasoning (tajin) for a little extra zing.  It gives another flavor dimension to the dip.  (sound like a real chef 😉 )  With 2 different cheeses, this dip is quite hearty.

And an extra bonus is that Spicy Sausage & Corn Dip is made in one pan.  Very little prep and very little clean-up.  Woo Hoo!!!!!  I put this dip in  a little crock pot to keep it warm during the football game so it’s hot and bubbly during commercial breaks or half time.  I serve it with tortilla chips and/or corn chips.

Mama Fawn’s Tips

  •  For an even extra spice, use spicy bulk sausage.
  • To add more spice, substitute pepper jack for the monterey jack cheese.
  • Cubing the cream cheese helps with the melting process.
  • I use frozen corn for this dip, but you can use canned or fresh corn, either would be delicious.
  • Rotel comes in a variety of flavors.  Use whatever is your favorite.  I use the original.
  • Use a large skillet for this dip because it makes a large quantity.
  • If you feel the sausage needs to be drained, go ahead and drain it.
  • You will want to serve this dip with a hearty chip because this dip is thick.

Ingredients

  • 1 lb. bulk breakfast sausage

  • 1 cup frozen corn, thawed

  • ¾ tsp chili lime seasoning (tajin)

  • 2 (8 oz) cream cheese, cubed

  • 1 (10 oz) can rotel diced tomatoes & green chilies

  • 1 cup shredded jack cheese

Directions

  • In a large skillet, brown the sausage until it is no longer pink. Add the corn and chili lime seasoning and stir well.
  • Add the cream cheese and rotel and cook until the cream cheese is fully melted; stirring constantly.
  • Add the jack cheese on the top and simmer on low heat for 5 minutes.
  • Serve with tortilla chips or corn chips. Enjoy!
