Pumpkin Chocolate Chip Bars is the perfect sweet for the fall season.  

A lot of food bloggers are working on their fall recipes in August or maybe even in July.  It is so hard to even think about that when you live in South Florida and the temperature is still in the 90’s throughout September and sometimes October.  Although it’s my favorite season of the year, it’s very short and I have to think of cooler weather (hopefully) and football games.

My family told me a couple of weeks ago that I needed to work on the fall recipes so here one is-Pumpkin Chocolate Chip Bars!

Pumpkin Chocolate Chip Bars are going to be one of the easiest desserts you make.  Add everything to one bowl and put it in a baking pan and bake.  I added an easy glaze to top the bars with and there you go! 

When I was thinking about this recipe, I kept on trying to think what would be a good stir-in for this bar.  At first, I was thinking about raisins, but I wasn’t sold on that idea.  Then maybe some kind of nut, and that would be good but not everyone likes nuts.  Also, Pumpkin Chocolate Chip Bars aren’t really sweet so I felt it really needed a sweet stir-in.

I was thinking about this for a few days and then I woke up this morning and thought of my mom’s Pumpkin Bread.  It is so good and everyone raves about it. ( I hope one day she will give it to me and then I’ll pass it on to you.)  My mom puts chocolate chips in her pumpkin bread so it’s extra delicious.  And there you have it!!!  It’s the perfect addition to the Pumpkin Chocolate Chip Bars.

The glaze on the Pumpkin Chocolate Chip Bars is your basic vanilla glaze; powdered sugar, vanilla and milk.  Whisk it all together to a smooth and drizzly consistency.  And pour over the cooled bars.

  •  Have all your ingredients measured and ready to go to make this recipe quick to make.
  • Make sure the batter is thoroughly combined but do not over mix.
  • The bars should be totally cooled before adding the glaze.
  • Whisking the glaze will make a smoother consistency.

Ingredients

  • ½ cup butter, melted

  • ½ cup brown sugar, packed

  • ¼ cup sugar

  • 11/2 cup flour

  • 1 large egg

  • 1 tsp vanilla

  • ½ tsp baking soda

  • ¼ tsp cinnamon

  • ¼ tsp nutmeg

  • ¾ cup 100% pumpkin

  • 1 cup chocolate chips

  • 1 cup powdered sugar

  • ½ tsp vanilla

  • 1-2 tbsp milk

Directions

  • Preheat the oven to 350 degrees.
  • In a mixing bowl, mix the butter and sugars with an electric mixer on medium speed until combined.
  • Add ½ of the flour, egg, baking soda, nutmeg, cinnamon and pumpkin. Beat until thoroughly combined. Stir in remaining flour. Fold in the chocolate chips and mix well.
  • Spread the mixture in a greased 13 x 9 in. baking dish and bake for 20-25 minutes or until a toothpick inserted near the center comes out clean.
  • Cool in the pan on a wire rack.
  • Meanwhile, in a small bowl, whisk together powdered sugar, vanilla and milk until the glaze is drizzling consistency.
  • Once the bars are cooled, spread the glaze over the entire cake.
