Breakfast Tacos are an easy but hearty breakfast full of eggs, sausage and cheese wrapped in a flour tortilla.

Living in Texas as a child, one of the things I remember is that anytime we went out to eat, there was always a container of flour tortillas on the table.  Well, maybe not at the Pizza House, but definitely at the little mom and pop restaurants.  Sometimes, you spread butter on it and roll it up and eat it that way.  Or you would use it as another utensil and it helped scoop up the food you were eating.  However you ate it, it was always there.  

There were also Breakfast tacos or burritos on the menu (except for Pizza House).  I was in love with them.  So that’s why I decided to make them.  They always bring back fond memories of deliciousness.  Each time I have returned to Texas either for vacation (San Antonio & Austin) or for a wedding with two of my favorite people, I make sure I go somewhere and get my Breakfast Taco.  And I always get the same kind (fond memories of deliciousness).  It could be at a nice restaurant that took over a historical house or a ‘hole in a wall’ storefront.  It doesn’t matter, Texans know how to make a good Breakfast Taco.

Breakfast Tacos are not only ‘scrumptious’ ( a term my husband likes to describe delicious food) but it only takes minutes to prepare.  Which is a good thing since a lot of us do not have a whole lot of time to make breakfast every day.  It only takes minutes to make and this can be made ahead of time so you can have breakfast ready to go, just zap them in the microwave for 45 seconds and you have a hot meal ready to go.  Win, Win!

Mama Fawn’s Tips

  •  I like breakfast sausage in my breakfast tacos, but feel free to use any type of meat; bacon, ham, or any meatless ‘meats’.
  • I use Southern style diced frozen potatoes for my breakfast tacos, but feel free to use shredded frozen potatoes.  Just make sure they are thawed or you will have issues with popping.
  • It is important that you turn down the heat after the meat and potatoes are fully cooked and before you get the egg mixture ready or your eggs will brown before the eggs are completely cooked.
  • I like cheddar for my breakfast tacos, but you can use any type of cheese you want.  Like a little spicy taco?  Then use shredded pepper jack.  
  • Add any desired toppings to your breakfast taco; sour cream,  salsa, avocado, hot sauce.
  • Feel free to add onions and peppers to the sausage and potato mixture to make it more of a western style taco.

Ingredients

  • INGREDIENTS

  • ½ lb. breakfast sausage

  • 1 cup frozen hash browns, thawed

  • 6 eggs

  • 2 tbsp milk or cream

  • ¾ tsp salt

  • 1 cup shredded cheddar

  • 6 flour tortillas (I prefer the fajita size)

Directions

  • In a large skillet, add crumbled sausage and potatoes and cook at medium high heat. Brown the sausage and potatoes until the sausage is no longer pink. Turn down the heat to medium low.
  • In a medium bowl, whisk the eggs, salt and milk.
  • Add the eggs to the skillet and stir with a spatula until the eggs are a bit soft but cooked through. Eggs continue to cook a bit afterwards.
  • Fill the tortillas evenly with the egg mixture, sprinkle with cheese and any other toppings you desire. Enjoy!
