I have been making Macaroni Tuna Salad for years.  It’s very different from your typical mayonnaise based macaroni salad for a few reasons.

It has cheese in it.  Cubed cheddar cheese.  Not only does it add flavor and texture but it also adds to the color of the salad.  Remember, we eat with our eyes first.  😉

Second, it not only has pickles but also green olives.  So the salad has the next level of saltiness/brininess to it.  It really adds such a wonderful flavor.  Even if you are not a fan of the green olives, you should at least give it a try once.

And the obvious reason Macaroni Tuna Salad is not your typical macaroni salad, it has tuna in it.  All the ingredients in this macaroni salad really makes what this salad is… wonderfully delicious!!!!!

I’ll make this salad at the beginning of the week and eat it for lunch during the week.

Mama Fawn’s Tips…

  •  I use sharp cheddar cheese in this dish but feel free to use any cheese you like.  
  • If you absolutely do not like olives, feel free to omit them.  Same goes for the pickles.
  • Maybe you’re not a fan of tuna, a can of chicken (drained) would work nice in this salad also.
  • Chop all your ingredients in a uniform size.
  • Rinse your pasta well before adding all the ingredients.  You want the pasta to be cooled.
  • Season your pasta water with salt when cooking to add another dimension of flavor.

Ingredients

  • 8 oz. box elbow macaroni

  • 1 (5 oz) can tuna, drained well

  • ¼ cup cubed cheddar cheese

  • 3 tbsp green olives, chopped

  • 2 tbsp dill pickle or sweet pickle relish

  • 2 hard boiled eggs, chopped

  • 1 cup mayonnaise

  • 1 tsp seasoning salt

Directions

  • Cook macaroni according to directions. Drain and rinse in cool water.
  • In a large bowl, combine the macaroni, tuna and remaining ingredients and mix well. Chill until ready to serve. Enjoy!
