Banana Chocolate Chip Muffins are a fantastic and delicious way of using extra ripe bananas that you have around.

Always wondering what to do with your extra ripe bananas, besides trashing them?  Banana Chocolate Chip Muffins are the perfect way to use them.  

Most likely, you have most, if not all, of the ingredients at home to make these muffins.  And what’s great about Banana Chocolate Chip Muffins is that they are so easy and quick to make.  Within 30 minutes tops, you have a dish that is ready for a quick breakfast or late evening snack.  One of those foods that you can grab and go without worrying about a mess or a lot of cleanup.  

Why are These Muffins Different than Your Usual Muffins?

One reason these muffins are special is that instead of oil, I use melted butter.  To be honest, I think butter is almost always better.  It not only does it increase the flavor level, but helps add to the golden color.  Second, I use a little bit of yogurt in the batter.  This adds a little zip to the taste and I believe it helps keep it from being too dry.  Lastly, Chocolate Chips!  Do I really need to say more?  🙂

Mama Fawn’s Tips…

  •  Make sure you use very ripe bananas.  My bananas are already browning and almost ‘squishy’ to the touch.  This will help with the moisture and the super banana taste. 
  • Mash the bananas very well.  No chunks.  It should look like a paste.
  • Do not over mix the batter, this will make your muffins on the tough side.
  • If you are not eating them within a couple of days, refrigerate them.

Ingredients

  • 2 cups of all-purpose flour

  • ¾ cups sugar

  • ¾ tsp baking soda

  • ½ tsp salt

  • 1 ½ cup mashed, ripe bananas (about 3-4 bananas)

  • ¼ cup plain yogurt

  • 2 large eggs, beaten

  • 6 tbsp butter

  • 1 tsp vanilla

  • 1 ½ cup chocolate chips

Directions

  • In a small saucepan, melt the butter. Set aside to cool.
  • Preheat the oven to 350 degrees. Spray muffin pans with cooking spray. Set aside.
  • Mix the flour, sugar, baking soda and salt together in a large bowl; set aside.
  • In a medium bowl, mix the bananas, yogurt, beaten eggs, butter and vanilla together. Lightly fold the banana mixture into the dry ingredients until just combined. Mix in the chocolate chips. With an ice cream scoop or large spoon, spoon the batter evenly into each muffin cup, filling it to the top.
  • Bake until the muffins are golden brown and a toothpick inserted in the center comes out clean about 20 minutes. Transfer to a wire rack to cool. Enjoy!!
