Can’t Help Falling in Love Cookies are a delicious, gluten-free cookie that may bring you a little nostalgia when eating them.

I know, I know… Why in the world would I be naming a cookie “Can’t Help Falling in Love”???  I have a very good reason, even if you may not think so…  😉  Must of us know that one of Elvis Presley’s favorite sandwiches was Peanut butter and Banana and since there is peanut butter and banana in this cookie I thought this name was appropriate.  Adding chocolate chips not only makes this appropriate but makes it perfect since almost everyone loves chocolate, right? So hence the name!!

Can’t Help Falling in Love Cookies are a delicious and gluten-free cookie.  So for you that have a gluten allergy or intolerance, you can eat this cookie guilt free.

This recipe is so easy to prepare.  Measure the ingredients, put them all in a bowl, mix well and bake.  How much easier could it be?  

Can’t Help Falling in Love Cookies tastes a little like banana-bread and has a soft texture to it.  It’s not overly sweet but a perfect balance from the chocolate chips and banana.

Mama Fawn’s Tips. . .

  •  Feel free to substitute milk chocolate chips for the semi-sweet chocolate chips.  It will make the cookie sweeter.
  • Make sure you use a ripe banana.  It will keep the cookie sweet.
  • It’s important that you let the cookie sit on the cookie sheet for a few minutes because the cookie is soft and will fall apart if you try to remove the cookie too soon.
  • I actually think these cookies taste best refrigerated.

Ingredients

  • 1 cup almond flour

  • 1 ¼ cup old-fashioned oats

  • 1 tsp baking soda

  • ¼ tsp salt

  • ¼ cup vegetable oil

  • ⅓ cup creamy peanut butter

  • ⅓ cup brown sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 cup semi-sweet chocolate chips

  • 1 ripe banana, mashed

Directions

  • Preheat the oven to 350 degrees.
  • Prepare your baking sheets by lining them with parchment paper, if desired.
  • In a large bowl, combine all the ingredients and mix well.
  • With a cookie scoop, drop the cookies onto the prepared cookie sheet, keeping them 2 inches apart.
  • Bake for 10-12 minutes until brown around the edges and baked through.
  • Take out of the oven and let sit on the cookie sheet for 2 minutes. Place on cooling racks until cooled. The cookies will be soft until cooled.
  • If you are not eating these cookies right away, store in an airtight container and eat within a few days. Enjoy!
