Chocolate Cherry Thumbprints

Chocolate Cherry Thumbprints

Because he himself suffered when he was tempted, he is able to help those who are being tempted. . .” Hebrews 2:18

Chocolate Cherry Thumbprints are a twist on my Apricot Thumbprint Cookies.  I think cherry and chocolate go so well together.  Probably one of my favorite sweet combinations.  So during the holidays while I was making thousands of cookies (maybe a little exaggeration, hehehe), I came up with this recipe and got rave reviews so I thought I’d share it with you.

I tweaked the recipe so it’s a little sweeter but not too much.

Chocolate Cherry Thumbprints are probably one of the easiest cookies you’ll ever make.  Just a few ingredients and voila! A great cookie that family and friends will enjoy.  This would be a perfect cookie for the Christmas holidays or Valentine’s Day.  Give it a try, you won’t regret it!!!

Mama Fawn’s Tips. . .

  •  Make sure the butter is softened before making the dough.
  • Chilling the dough helps the cookie not to spread too much when baking.
  • Dampen your thumb before pressing into the cookie.  This will help it from sticking.

Ingredients

  • 1 cup butter, softened

  • 1 cup sugar

  • 3 egg yolks

  • ½ tsp vanilla

  • 2 cups flour

  • ¼ cup cocoa powder

  • ¼ tsp salt

  • Cherry Preserves or Jam

Directions

  • In a large bowl, cream butter. Gradually add the sugar, beating at medium speed until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, cocoa powder and salt and add to the creamed mixture; mixing well.
  • Chill the dough for about an hour.
  • If the dough is too stiff, let it set out for about 15-30 minutes.
  • Preheat the oven to 300 degrees.
  • Shape dough into 1 inch balls; place about 2 inches apart on a parchment lined cookie sheet. Press a thumb in each cookie leaving an indention. Do not go all the way through the cookie dough. Spoon a teaspoon of cherry preserve in the indentation of each cookie.
  • Bake for 20-25 minutes. Let sit on the baking sheet for a couple of minutes. Cool on wire racks. Enjoy!
