Neapolitan Grilled Sandwich is a grilled cheese sandwich taken up a notch. . .or a few notches

Nothing is more comforting than a grilled cheese sandwich.  For a while, my husband would have a grilled cheese sandwich and tomato soup for dinner every Saturday night when he came home from work.  

I always liked a grilled cheese sandwich with something else; tomato, ham, turkey…or this. . . .Neapolitan Grilled Sandwich.     

How can you go wrong with a melty cheese, spicy pepperoni and the ‘herby’ taste of pesto?  I promise you, this is so good.  It will only take you minutes to make this sandwich and sit at your table ready to eat.  

Add a salad or of course tomato soup and you have the perfect, comforting meal.

Mama Fawn’s Tips. . .

  •  Keep an eye on your sandwich when grilling it, it can burn very quickly if you are not watching it. 
  • Feel free to use mozzarella if you prefer.  That would be delicious also.
  • Make sure you press the parmesan into the pesto or it will all come falling over when you lay it into the pan.
  • I found my sandwich pepperoni at the grocery store’s deli.
  • Want to make more than one sandwich?  Just double or triple the ingredients.

Ingredients

  • 2 slices of italian bread

  • 2 tbsp pesto

  • 1 tbsp parmesan (grated or shredded)

  • 4 slices provolone

  • 7 slices sandwich pepperoni, sliced thin

  • 2 slices tomato

  • 1 tsp butter

Directions

  • Preheat a small skillet over low heat, add the butter.
  • Spread the pesto over one side of each piece of bread. Sprinkle the parmesan over the pesto and press it into the bread.
  • Place one slice of bread, pesto side down, in the skillet. Add 2 slices to the provolone, followed by the pepperoni and tomato and the other 2 slices of provolone. Top with the remaining slice of bread, pesto side up.
  • Grill until golden brown, about 4-5 minutes. Flip carefully and grill the other side until golden.
