Cornbread Muffins with Honey Butter Glaze

Cornbread Muffins with Honey Butter Glaze is an adaptation of my cornbread recipe. 

Growing up, I had never been a fan of cornbread.  Just wasn’t my thing.  Not until a few years ago, have I taken a liking to cornbread.  There’s a local barbecue restaurant we frequent that makes a skillet cornbread to die for so it gave me ideas to find a good recipe that would please my tastebuds.  And here it is!!!  Making the cornbread into muffins, makes it easier for everyone during dinner and as leftovers throughout the week (if there are any…  😉  ) 

Cornbread Muffins take only minutes to prepare and in a half hour time your muffins will be ready.

Mama Fawn’s Tips. . .

  •  I think baking the muffins directly in the muffin tins are best but for easy cleanup, feel free to use cupcake liners.
  • I prefer salted butter for the Honey Butter Glaze, but again feel free to use unsalted butter if that is what you desire.
  • Brush the glaze on as soon as the muffins come out of the oven.
  • Do not over bake the muffins.  They can dry out very quickly.

Cornbread Muffins with Honey Butter Glaze will be the perfect compliment to your next meal.

Ingredients

  • 2 cups flour

  • 1 cup cornmeal

  • 1 cup sugar

  • 2 ½ tsp baking powder

  • ¾ tsp salt

  • 2 eggs

  • 1 ½ cups milk

  • ½ cup vegetable oil

  • 3 tbsp butter

  • 4 tbsp honey

Directions

  • Preheat the oven to 325 degrees.
  • Grease muffin pans with spray oil or line with cupcake liners.
  • Combine the flour, cornmeal, sugar, baking powder and the salt in a large bowl.
  • Whisk the eggs until beaten in a medium bowl; add the milk and oil and mix well.
  • Pour the wet ingredients into the dry ingredients and whisk well until thoroughly combined.
  • Pour the batter into the greased or paper lined muffin pan cups, filling each all the way to the top.
  • Bake the muffins for about 20 minutes or until a toothpick inserted in the center comes out clean.
  • While the muffins are baking, in a small saucepan, combine the butter and honey over medium low heat until the sugar and honey is melted.
  • When the muffins come out of the oven, brush the honey butter over the hot muffins. Let cool. Enjoy!
