Granola Cookies

Granola Cookies are a great treat to have around the house as an afternoon snack for the children or something sweet to bring on a trip during the summer.  They can be made quickly and they keep real well.  With ingredients that are pretty healthy you won’t feel guilty.  

Mama Fawn’s Tips. . .

  •  When toasting the almonds, keep an eye on them because they will burn quickly.
  • When browning the butter, you want to keep an eye on it too.  It can burn within seconds.
  • The cookie mixture is very crumbly.  Make sure all the mixture is combined well.  There isn’t any dry mixture.
  • It’s important that you pack the cookie mixture into the cookie scoop so it will all hold together.
  • You will want to make sure you cool the cookies on the baking pan until they are set.  Taking them off too early will cause them to break.

Granola Cookies

Ingredients

  • ½ cup slivered almonds

  • 9 tbsp butter

  • 2 tbsp honey

  • ¾ cup + 2 tbsp packed brown sugar

  • 1 cup old-fashioned oats

  • ½ cup dried apricots, finely chopped

  • ½ tsp salt

  • ½ tsp baking soda

  • 2 tbsp hot water

Directions

  • Preheat the oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • Heat a skillet over medium heat and add the almonds. Spread nuts evenly over the surface and after a minute stir. Continue to do this until the almonds are lightly toasted and fragrant. Watch carefully, they can burn easily. Remove from pan and cool.
  • Heat butter in a saucepan over medium-low heat. As the butter melts, continually swirl the butter around until the butter is light brown in color. Keep careful watch since the butter can burn in seconds. Add the honey, stirring until it’s melted. Remove from heat.
  • Whisk brown sugar, flour, oats, toasted almonds, apricots and salt in a large bowl to combine. Stir baking soda and hot water in a cup until baking soda is dissolved. Pour into butter mixture, stirring to combine. Add butter mixture to the dry ingredients and stir until well combined. You want all the mixture to be moist.
  • With a tablespoon cookie scoop, pack the mixture into the scoop and place balls on the lined baking sheet, spacing them 2 inches apart. Slightly flatten with your fingers.
  • Bake cookies for about 10 minutes until golden. Let cool on baking sheets. Enjoy!

  1. I got to taste a couple of cookies that Fawn made. And hands down these are now my new favorites. I loved home baked chocolate chip cookies. But she did a killer job on these Granola Cookies. Can’t wait to get I more
