Chicken Tortellini Soup is the perfect soup for the spring or summer.  It’s light and simple to make and it literally takes minutes to prepare.  Serve this with a salad and a piece of bread and you have a complete meal that will not only fill your tummy but also please your taste buds.

One of the main reasons for making Chicken Tortellini Soup is because it is so easy and quick to make. Within minutes, you have a comforting and filling soup. Rich in fresh vegetables and the hearty tortellini, it really brings warmth to your tummy (and maybe your soul. . .)

What Do I Need to Make Chicken Tortellini Soup?

You will need a dutch oven, a cutting board, knife, measuring cups and spoons, spoon and the following ingredients:

Olive oil, onion, salt/pepper, dried parsley, carrots, chicken breast, chicken broth and cheese tortellini.

Mama Fawn’s Tips. . .

  • I use fresh tortellini in this recipe.  If you decide to use dry tortellini, adjust your cook time to the directions on the package.  
  • To make this soup quicker, instead of cooking the chicken substitute it for rotisserie chicken.
  • Feel free to add your favorite veggies to the soup.

Ingredients

  • 1 tbsp olive oil

  • 1 medium onion, chopped

  • 1 tsp salt

  • ½ tsp pepper

  • ½ tsp dried parsley

  • ½ cup shredded or diced carrots

  • 1 lb chicken breast, diced

  • 7 cups chicken broth

  • 1 lb fresh cheese tortellini

Directions

  • Heat oil at medium-high temperature. Add onions, salt, pepper and parsley and cook until onions are softened about 6 to 8 minutes, stirring occasionally so it doesn’t brown. Add carrots and cook for an additional 2 minutes. Add chicken and cook until no longer pink for about 5 minutes, stirring occasionally.
  • Increase heat and add chicken broth, bringing it to a simmer. When broth is to a simmer, add tortellini and cook for 5 minutes. Enjoy!
