Steakhouse Soup is exactly what the name implies.  Beef, Potatoes, Mushrooms….what could be better? 

This dish may take some time to make (you want that beef to get tender) but it will be worthwhile.  Stew beef is an inexpensive cut of meat so you want it to simmer in the broth for the full hour plus but doing it will give you a tender beef. The mushrooms also give the soup a ‘meatiness’ and add to the flavor.  The tomato paste and Worcestershire sauce provides a taste of heartiness.  

If you want a thicker consistency to this soup, just add the cornstarch slurry at the end of cooking.  Make sure you allow it to cook for at least a minute to cook out the cornstarch and give the soup a chance to thicken.

Serve Steakhouse Soup with a hearty slice of bread and this meal will be complete.

Ingredients

  • 2 lb stew beef (fat trimmed, if needed)

  • 3 tbsp flour

  • 3 tbsp olive oil, divided

  • 1 onion, diced

  • 1 (8oz) mushrooms, rinsed and quartered

  • 1 tsp salt

  • 1 garlic clove, minced

  • 2 tbsp tomato paste

  • 6 cups beef broth

  • 1 tbsp worcestershire sauce

  • 1 large potato, peeled and slice into bite size pieces

  • 1 tbsp cornstarch (optional)

  • 1 tbsp water (optional)

Directions

  • Toss beef and flour together.
  • Heat 2 tablespoons of oil in a dutch oven over medium-high heat. Cook beef until browned on all sides. Remove beef from the pan and keep warm.
  • Turn heat down to medium and heat remaining 1 tablespoon of oil. Add onions, mushroom and salt and cook until vegetables are soft for about 15 minutes, stirring often. Add garlic and tomato paste and cook for about 1 minute, stirring well. Return beef to the pot and add broth and worcestershire sauce and turn the heat up to medium heat until it’s to a boil. Cover and turn down heat to simmer and cook for 1 hour, stirring occasionally. After the hour, turn the heat up to medium and add the potatoes. Cook for about 20 minutes more uncovered.
  • *Optional* If you prefer a thicker soup, mix the cornstarch and water and add to the simmering water and cook for about a minute.
