Peach Blueberry Cobbler is a delicious ending to a meal. Although it may be effortless to make, it could easily be one of your favorites. With only a few ingredients, the prep time is quick and then it’s in the oven to bake. You can have this ready to go in the oven before your dinner and it will be piping hot ready for some ice cream when it’s time for your dessert.
Peaches are considered a seasonal fruit at its peak in the summer. No need to worry about that with this recipe since you are using canned peaches. The blueberries pop with flavor as it’s being baked with the peaches and the biscuit-like crust is light and sweet.
INGREDIENTS:
⅔ cup +2 tbsp. sugar
1 cup self-rising flour
½ cup melted butter, divided in half
1 (28 oz) can sliced peaches, undrained
6 oz. fresh blueberries
DIRECTIONS:
Preheat oven to 350 degrees. In a bowl, mix the ⅔ cup sugar, flour and half of the melted butter (¼ cup). Sprinkle one-third of the mixture on the bottom of a baking dish. Add the peaches, juice and all. Spread the blueberries over the peaches. Top the peaches and blueberries with the remaining flour mixture. Sprinkle the top with the two tablespoons of sugar and the remaining ¼ cup of melted butter. Bake for 40 minutes, or until brown and bubbly. Enjoy!
