Loaded Chili Baked Potato

You can pretty much add anything to a potato and include a salad; you have a complete meal.  This recipe is using the chili that you have as leftovers.  You can top it with anything but this is my favorite.  The recipe is for only one serving but feel free to multiply is as much as you need.

Prep Time: 5 minutes

Cooking Time: 60 minutes

INGREDIENTS

1 Baking Potato

2 tablespoons of shredded cheddar

½ cup Mama Fawn’s Chili 

1 dollop sour cream or plain yogurt

1 tsp. Sliced green onion

Directions:

Preheat oven to 400 degrees.  Scrub your potato well.  Use a fork to poke a few holes into the potato.  If you like a soft skin (which I prefer), wrap your potato in aluminum foil.  Put in the preheated oven and bake for an hour.

Remove potato from the oven and slice open and add chili (which has been warmed), sour cream and green onion and enjoy!

*If you are only preparing one potato, you can always microwave it on high for about 5 minutes on one side and then a few minutes on the next side, depending on the size of the potato.  Please do not forget to poke a few holes in it before cooking.  I know from experience a potato exploding in the oven and microwave.
