Key Lime Meltaways

This recipe is an actual adaption of another cookie I had make except with lemon and it’s is absolutely wonderful but I thought since I don’t live too far from the Florida Keys I would tweak it a little.  Also, my son-in-law, Harrison, loves Key Lime Pie.

You can buy key lime juice in a bottle but the zest of the lime is what really gives that authentic flavor. This recipe is not hard but it is a little time consuming zesting each lime since the limes are very small and then juicing each one also.  The time is well worth it though because the cookie is refreshing and tart and taste just a little like the tropics.

KEY LIME MELTAWAYS

2 sticks butter, softened

1 cup powdered sugar

1 tbsp. finely grated key lime zest

2 tbsp. fresh key lime juice

2 cups all-purpose flour

½ tsp. salt

Glaze

1 ¼ cup powdered sugar

3 tbsp. fresh key lime juice

2 tbsp. butter, softened

Green food coloring

Preheat oven to 350 degrees.  In a large bowl, beat the butter and powdered sugar until smooth.  Beat in key lime zest and juice.  Add the flour and salt and mix until just blended, scraping the bowl, as needed.

With an one inch scoop, place the cookie dough on a parchment lined baking sheet, gently flattening each cookie.  Bake for about 12 minutes until the bottom of the cookies are lightly browned.  Let the cookies rest on the cookie sheet for a couple of minutes and then transfer to a rack to completely cool about 15 minutes. 

Next, in a bowl, whisk the powdered sugar, key lime juice and butter until smooth.  Add a couple of drops of food coloring and mix until completely green, with no streaks of color.

Spread the glaze on the cookies and let stand for at least 15 minutes.  Enjoy!
