Cherry Chocolate Chip Cookies are not only a family favorite but it is so simple to make. To make these cookies quickly, it is to have your ingredients already measured out and ready to go. When you do that, your cookie dough will be ready in about 5 minutes. You do not have to chill the dough but if you don’t, you will have a flat cookie. It will still taste great but aesthetically, not so much. Of course, you eat first with your eyes so I wanted to have a cookie that was pleasing to the eyes first and I think I succeeded. The dried cherries give the cookie the perfect tartness with the sweetness of the chocolate.
Cherry Chocolate Chip Cookies
2 sticks butter, softened
¾ cup granulated sugar
¾ cup brown sugar, packed
1 ½ tsp vanilla
2 large eggs
2 ¼ cups all-purpose flour
1 tsp baking soda
1 tsp salt
2 cups chocolate chips
1 ½ cup dried cherries, chopped
Preheat oven to 375 degrees
Beat the butter, the sugars and vanilla in a large mixing bowl until creamy. Add eggs, one at a time, beating well. Add 1 cup of the flour, baking soda and salt, beat well. Gradually add the remaining flour. Fold in chocolate chips and dried cherries. Chill dough in refrigerator for about 15-30 minutes. Drop by rounded tablespoon on a parchment lined cookie sheet. Bake for 9-11 minutes or until golden brown. Cool on cookie sheet for a couple of minutes and then remove to wire racks to cool. Enjoy!
